Using the whole carcass

Most Good Groceries customers who ingest animal proteins do so with a certain gravity. We recognize that one being is losing its life in order to sustain another … namely, us. At the Good Groceries home table, before we dig into a meal we talk about the animal and which of our local folks cared for it and harvested it, and we savor its tremendous flavor as a gift.
Good Groceries seeks out operations that waste as little of a carcass as possible. This is why we carry organ meats and soup bones. Many of our farmers/ranchers, including Heather Rudolph in Baker and Theresa Stangel in Enterprise, also offer skulls and tanned hides as home decor (if you're interested please get in touch).
And so, I was thrilled finally to be able to connect with Local Ocean the last time I did a pop-up shop in Portland.
Local Ocean, based in Newport, is a phenomenon worthy of your further investigation. Due to transportation challenges I am unable to carry their fresh-caught fish at Good Groceries, but they have — in the interest of using the whole animal — recently developed two terrific products that I added to our menu: frozen fish broth and dried fish skin pet treats.
Check them out! Local Ocean developed these products expressly to make productive use of previously discarded bits. Support them and support sustainable regional fisheries.
